Fusilli are a type of pasta with an elongated shape having two or more coils, made with ancient durum wheat semolina. The name comes from the spindle, a tool used for hand spinning. Once upon a time, square-section iron skewers or sticks were used to make perfect fusilli. The grandmothers kept aside some umbrella wire, perfect for this purpose! Fusilli are accompanied with a wide range of condiments, from the simplest and freshest ones such as fusilli with cherry tomatoes and mozzarella, vegetables and fish, to the more intense ones with a rich meat sauce which includes lamb, veal and sausages. The twisted shape of this format holds any type of sauce very well, making fusilli the undisputed protagonist of many delicious first courses.
